Silver Dollar Pancakes
Starchy and delish, there’s no need to top off these flapjacks with sugary syrup—they’re sweet enough as is thanks to the creamy banana and buttery pecans. They’re also gluten-free and provide a nice amount of protein. An attackable stack, indeed. Enjoy!

Oh. My. Gosh. These are literally the BEST pancakes I’ve ever had. I love the addition of cottage cheese and the bananas make it perfectly sweet. I do add a teaspoon or two of sugar but I’m trying to decrease that each time I make them. But seriously I could eat these EVERY DAY. And I love the fact that they are only 162 calories for 4 pancakes! Thank you so much Joy! I LOVE all your recipes! ❤️p.s I’m actually doing a meal plan this week featuring a lot of your recipes which have all been i.e. Swedish meatballs, chicken tenders, oven fries, personal pizza, beef fajita wrap❤️
Hi Mary. So glad you love these pancakes (and all of Joy’s recipes)! And your meal plan sounds delicious…good luck with it!
