Silken tofu gives this smoothie a good dose of vegetarian protein and a thick, creamy texture. If you prefer, substitute ½ cup nonfat yogurt (plain or vanilla) for the tofu.

This recipe makes 1 Serving
- 3/4 cup soy milk (may substitute skim, almond, or rice milk)
- 1/2 cup silken tofu (quarter of a 16-ounce block)
- 1/2 medium banana (preferably frozen), sliced into rounds
- 1/2 cup frozen strawberries
- 3 to 5 ice cubes
Combine all ingredients in a blender, and blend until smooth and frothy.
1 serving = 2 cups
