One-Pot Taco Soup (Protein-Packed and Super Satisfying)

It’s action-packed with ground meat, onions, black beans, corn, and jalapeños (if you feel like adding them in), and perfectly seasoned so each bite makes you crave another… and another (trust me on this one).

This soup’s extra special because, well, I love all things tacos! Whether it’s Taco Tuesday or just a random Wednesday, I’ll find any excuse to bring those flavors to the table. One-Pot Taco Soup (Protein-Packed and Super Satisfying)
Ingredients
- 1 pound ground turkey or beef, 90 to 94% lean
- 1 medium onion, diced
- 2 (15-ounce) cans black beans, rinsed and drained
- 1 (15-ounce) can corn, rinsed
- 1 pint cherry or grape tomatoes, quartered*
- 1 jalapeño, diced (optional)**
- 2 (1-ounce) packets taco seasoning mix, ~4 tablespoons total***
- 4 cups reduced-sodium chicken broth
Optional toppers:
- Cilantro
- Avocado
- Jalapeño
- Crushed taco shells
- Greek yogurt
- Shredded cheddar cheese
Instructions
- Liberally mist a soup pot or a large, deep skillet with oil spray and warm over medium-high heat. Add the meat and onions and cook for 6-9 minutes, chopping with a wooden spoon or spatula to crumble the meat as it browns.
- Add the beans, corn, tomatoes, jalapeños and taco seasoning mix. Stir to combine. Add the broth and mix everything together. Bring to a boil, reduce heat and simmer for about five minutes or so until the soup is piping hot.
- Ladle into bowls and garnish with optional toppers!

Joy’s Taco Soup was absolutely a big hit! Love the taco taste and perfectly seasoned!
I decided to use the optional jalapeno, but diced just a half for personal preference. I also did as she suggested and started with 2 Tbs of taco seasoning and slowly increased it after a few tastes. I think I ended up with close to 4 Tbs (like she prefers), using a combo of Siete Mild and Spicy packets. Next time I plan to make Joy’s taco seasoning, because no doubt it will be even better, if that’s possible! The crushed chips that I used in serving bowls were Siete Lime flavored, and I think they added a really good lime zip to the finished product!!!

I used ground chicken, a can of the fire-roasted diced tomatoes and just substituted a 4 oz can of chopped green chilies for the jalapeno. So pretty much the same as you had suggested and it was delicious and SO EASY!

This is a very easy recipe! I used grape tomatoes but next time I will definitely use fire roasted to add more flavor. I doubled the meat so I should have used more taco seasoning, I did add more chilli powder.
