When the summer heat cranks up, I skip the oven and reach for recipes like these Watermelon Cupcakes. They’re cool, refreshing, and come together in minutes—slice, top, and serve.

Each one starts with a thick circle of watermelon and gets topped with a swirl of whipped cream (or a sturdier mascarpone blend if you need it to hold up longer). Then comes the fun part: sprinkle on your favorite toppings—berries, toasted nuts, shredded coconut, mini chocolate chips, granola… you can get as creative as you like.

The first time I made these Watermelon Cupcakes, I was prepping for a pool party and had a big ol’ watermelon sitting on my counter. Ayden walked by and said, “We’re not having cake?” So, wanting to be a clever mom, haha, I grabbed a cookie cutter and some whipped cream, and within minutes we had made five mini cake-style masterpieces. I brought them out on a platter, and they were gone in seconds—no forks needed!

2-Ingredient Watermelon Cupcakes

These gorgeous mini cakes look like they belong in a fancy dessert shop. But, look a little closer and you’ll see that instead of cake, I’m using naturally sweet watermelon as the base.
Yield: 5 servings
Prep Time: 10 minutes

Ingredients
 

  • 5 watermelon rounds, approximately 2 inches in diameter and 2 inches tall (try using a cookie cutter)
  • 5 generous squirts aerated whipped cream
  • Optional garnish: mint leaves, slivered almonds, blueberries, mini dark chocolate chips, shredded coconut, granola*.
Ingredient Details to Know
*If you follow a nut-free diet, leave out optional nut toppings.

Instructions
 

  • Place your watermelon rounds on a platter.
  • Right before serving, top each mini "cake" with aerated whipped cream and garnishes of choice.

Notes

The aerated whipped cream will begin to “melt” after a couple minutes, so serve immediately. If the desserts are going to sit out longer, I suggest mixing in about 3 tablespoons of mascarpone cheese into about ½ cup whipped cream, then piping the topping onto the cakes and garnishing. This will help the topping hold much longer for that beautiful finish.
• No cookie cutter? Simply cut your watermelon into triangles with the rind, and add toppings of choice. It will resemble a small slice of dessert pizza! 😉
