This recipe makes 1 Serving
- 1 egg
- 3 egg whites
- 1/2 cup chopped cooked vegetables
Whisk egg plus egg whites in a bowl before adding to a heated skillet misted with oil spray. Gently push egg mixture around pan until they are cooked through and nicely scrambled. Approximately 2-3 minutes.
Add in “leftover veggies” and heat through for an additional minute and season with preferred herbs, and salt and black pepper to taste. Plate and serve!
