Key Lime Overnight Oats

OAT my goodness, do I have a subLIME and easy recipe for you: Key Lime Overnight Oats! This dessert-like morning meal takes only minutes to prep.

Ingredients
 

  • ½ cup old-fashioned rolled oats
  • ½ cup almond milk, or any other preferred milk
  • ½ cup nonfat or low-fat Greek plain yogurt*
  • 1 Tablespoon chia seeds or ground flaxseeds, also called flax-meal
  • 1 Tablespoon key lime juice, or regular lime juice
  • ½ teaspoon lime zest
  • ½ teaspoon vanilla extract
  • 2 teaspoons maple syrup or honey
  • Pinch of salt
  • 1 to 2 Tablespoons granola cereal, optional
  • *You can swap in part-skim ricotta cheese or whipped cottage cheese

Instructions
 

  • Add all the ingredients (except the granola cereal, if using) in a small mixing bowl and stir until well-blended.
  • Transfer to a small mason jar or pretty container with a lid, cover and stash in the fridge for at least 3 hours to overnight. Right before eating add crunchy granola cereal and dig in!

Notes

Add 35 calories for each Tablespoon of granola.
