Key Lime Overnight Oats
OAT my goodness, do I have a subLIME and easy recipe for you: Key Lime Overnight Oats! This dessert-like morning meal takes only minutes to prep.
Ingredients
- ½ cup old-fashioned rolled oats
- ½ cup almond milk, or any other preferred milk
- ½ cup nonfat or low-fat Greek plain yogurt*
- 1 Tablespoon chia seeds or ground flaxseeds, also called flax-meal
- 1 Tablespoon key lime juice, or regular lime juice
- ½ teaspoon lime zest
- ½ teaspoon vanilla extract
- 2 teaspoons maple syrup or honey
- Pinch of salt
- 1 to 2 Tablespoons granola cereal, optional
- *You can swap in part-skim ricotta cheese or whipped cottage cheese
Instructions
- Add all the ingredients (except the granola cereal, if using) in a small mixing bowl and stir until well-blended.
- Transfer to a small mason jar or pretty container with a lid, cover and stash in the fridge for at least 3 hours to overnight. Right before eating add crunchy granola cereal and dig in!
Notes
Add 35 calories for each Tablespoon of granola.
To make this recipe nut-free, use a nut-free milk (such as soy milk or dairy milk).
