Hello, pesto! Pizza gets a green, herbalicious makeover with this scrumptious spread. I mean, toast towered with savory pesto, melty mozzarella, juicy tomato, and aromatic basil… it doesn’t get much better than this.

This recipe makes 1 pizza toast
- • 1 slice whole-grain toast
- • 1 Tablespoon pesto (jarred or my Classic Pesto)
- • 3 to 4 tomato slices
- • ¾ ounce mozzarella cheese, thinly sliced
- • A few basil leaves, garnish
Preheat oven to 400ºF.
Spread pesto on whole-grain toast and layer with sliced tomatoes, mozzarella cheese. Broil for a few minutes in oven until cheese gets melty. Top with extra pesto and basil leaves.
Add 70 calories per additional Tablespoon of pesto.
