5-Minute Pizza Toast with Pesto and Mozzarella

Hello, pesto! Pizza gets a green, herbalicious makeover with this scrumptious spread.

Ingredients
 

  • 1 slice whole-grain toast
  • 1 Tablespoon pesto, jarred or my Classic Pesto
  • 3 to 4 tomato slices
  • ¾ ounce mozzarella cheese, thinly sliced
  • A few basil leaves, garnish

Instructions
 

  • Preheat oven to 400ºF.
  • Spread pesto on whole-grain toast and layer with sliced tomatoes, mozzarella cheese. Broil for a few minutes in oven until cheese gets melty. Top with extra pesto and basil leaves.

Add 70 calories per additional Tablespoon of pesto.
