Whip up this Ribbons Pasta Salad for a super simple (and low-carb) summer salad that’ll help you de-bloat and leave you feeling as light as a feather.

Ingredients
 

  • 1 zucchini squash
  • 1 yellow summer squash
  • 2 tablespoons grated parmesan cheese
  • Squeeze of fresh lemon juice
  • Kosher salt, to taste
  • Ground black pepper, to taste

Instructions
 

  • Wash summer squash and zucchini well.
  • Use a vegetable peeler to create long pasta-like strands.
  • Toss with a squeeze of lemon juice and then sprinkle grated parmesan cheese, and salt and pepper to taste.
