Cherry Granola

Whip up a batch of your own good-for-you granola with this simple and wholesome recipe featuring oats, cherries and pumpkin seeds.

Total Time: 55 minutes

Ingredients
 

  • 3 cups old-fashioned rolled oats
  • 1 teaspoon cinnamon
  • ½ teaspoon ginger
  • ½ cup unsweetened applesauce
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • ¼ cup unsweetened dried cherries
  • 2 tablespoons raw pumpkin seeds

Instructions
 

  • Preheat oven to 275˚. Line a baking sheet with foil.
  • In a large mixing bowl, combine oats, cinnamon and ginger. In a separate, smaller bowl, mix together applesauce, maple syrup and vanilla.
  • Add the wet mix to the dry mix; stir to combine. Fold in the cherries and pumpkin seeds and pour the mixture onto the prepared baking sheet in one even layer.
  • Bake for about 45 minutes, stirring every 10 to 15 minutes until lightly browned and crunchy. Remove from the oven and let cool.
