Whip up a batch of your own good-for-you granola with this simple and wholesome recipe featuring oats, cherries and pumpkin seeds. Use it to create a yogurt parfait, sprinkle some over your salad for a satisfying crunch or add it to trail mix.

This recipe makes 12 servings
  • 3 cups old-fashioned rolled oats
  • 1 teaspoon cinnamon
  • ½ teaspoon ginger
  • ½ cup unsweetened applesauce
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • ¼ cup unsweetened dried cherries
  • 2 tablespoons raw pumpkin seeds

Preheat oven to 275˚. Line a baking sheet with foil.

In a large mixing bowl, combine oats, cinnamon and ginger. In a separate smaller bowl, mix together applesauce, maple syrup and vanilla. Add wet to dry mix; stir to combine. Fold in cherries and pumpkin seeds and pour onto baking sheet in one even layer.

Bake for about 45 minutes, stirring every 10 minutes until lightly browned and crunchy. Remove from oven and let cool.

Makes 12 servings (about ¼ cup per serving)
