Sweet Ricotta Cream & Berry Parfait

Red, white and berries! This patriotic parfait is the ideal treat for a 4th of July barbecue or picnic, or really, any summer day.

Ingredients
 

  • ½ cup part-skim ricotta
  • 2 teaspoons almond milk
  • 1 teaspoon honey
  • ½ to 1 teaspoon vanilla extract
  • ¼ cup blackberries
  • ¼ cup blueberries
  • ¼ cup raspberries
  • Mint leaves, optional for garnish

Instructions
 

  • Mix ricotta with milk, honey, and vanilla. Set aside.
  • Line a parfait glass with blackberries and blueberries. Add a second layer of ricotta cream and finish with raspberries on top. Garnish with optional mint leaves.
