Red, white and berries! This patriotic parfait is the ideal treat for a 4th of July barbecue or picnic, or really, any summer day. It’s so easy to make, gorgeous to look at and it is sweet and decadent. Not to mention, it’s packed with satiating protein and filling fiber. Kids and adults will devour it.

- • ½ cup part-skim ricotta
- • 2 teaspoons almond milk
- • 1 teaspoon honey
- • ½ to 1 teaspoon vanilla extract
- • ¼ cup blackberries
- • ¼ cup blueberries
- • ¼ cup raspberries
- • Mint leaves, optional for garnish
Mix ricotta with milk, honey, and vanilla. Set aside.
Line a parfait glass with blackberries and blueberries. Add a second layer of ricotta cream and finish with raspberries on top. Garnish with optional mint leaves.
