5-Minute Carrot Mug Cake
This crave-worthy dessert makes a single serving in less than 5 minutes… in the microwave!

Mug cakes are my secret weapon for when I want something sweet without a ton of effort—and without tempting leftovers staring me in the face (I have the hardest time resisting sweets when they’re sitting on my counter!) There’s no preheating an oven, no waiting around—just instant, delicious gratification. And this creation really tastes like a mini slice of homemade carrot cake, complete with warm spices, hints of vanilla, and signature bites of carrot in every spoonful.

As a registered dietitian, I’ll always say yes to a dessert that sneaks in some veggies—especially when it’s as delicious as this. There’s just something about the combination of warm cinnamon, tender shreds of carrot, and that perfectly moist cake that makes it so special. And the cream cheese frosting; I mean, is it even carrot cake without it? No!
That’s my reasoning for creating this cinnamon-kissed carrot mug cake—because sometimes, you just need a carrot cake fix without baking an entire one. Okay, so it’s not winning any health awards due to the boxed cake mix, but hey, it’s light on calories, perfectly portioned, and contains a veggie boost. I’m calling that a triple threat of yum! And yes, this little treat even made its way onto TODAY.com!

5-Minute Carrot Mug Cake
Ingredients
Carrot Cake
- ¼ cup yellow boxed cake mix
- ¼ cup water
- ½ teaspoon vanilla extract
- ⅛ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- 2 to 3 tablespoons shredded or grated carrots, finely chopped
- 1 tablespoon chopped walnuts or pecans, optional
Frosting
- 1 tablespoon light cream cheese, softened*
- 1 teaspoon maple syrup
Instructions
- Mist a large mug with oil spray. Add all of the ingredients and mix together so they're well combined.
- Microwave for 2 ½ to 3 minutes. (Start with 2 ½ minutes and check for doneness. If you'd like it firmer, place back into microwave for another 30 seconds). Let slightly cool.
- While the cake is in the microwave, make the frosting by mixing the softened cream cheese with the maple syrup until well blended. Spread over carrot cake, garnish with optional chopped walnuts and shredded carrots, and dig in.

Hi Susan. Joy’s microwave is 950 watts, but yes, as you mentioned, every microwave is different, so you may have to adjust based on your microwave. Joy gives a time range for cooking in the recipe above, so you can use that as a guide. Hope this info helps!

Hi Beverly! I haven’t tried doubling the ingredients in a large mug for a higher, bigger serving, but I assume it will work well. One note: you will likely need a longer cook time in the microwave. I’d suggest starting with 2 1/2 minutes (as in the original recipe), then checking the texture. If it’s too moist, continue cooking in 30-second increments (checking after each one) until you reach the perfect consistency. If you decide to give it a try, I’d love to know how it turns out!

What do you do with the remaining cake mix?
Hi Diane, Joy uses the leftover cake mix to make extra mug cakes and her 3-ingredient berry cobbler. (Please note that any flavored cake mix will work for the cobbler, even though the recipe specifices vanilla cake mix.) Hoping you enjoy it as much as we do!
