Carrot “Mug” Cake
This crave-worthy dessert makes a single serving in less than 5 minutes…in the microwave!

Carrot “Mug” Cake
This crave-worthy dessert makes a single serving in less than 5 minutes…in the microwave!
Ingredients
Carrot Cake
- ¼ cup yellow boxed cake mix
- ¼ cup water
- ½ teaspoon vanilla extract
- ⅛ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- 2 tablespoons shredded carrots, finely chopped
Frosting
- 1 tablespoon light cream cheese
- 1 teaspoon maple syrup
Instructions
- Mist a large mug with oil spray and set aside.
- In a small bowl, combine all cake ingredients and whisk together. Pour cake mixture into the mug and microwave for 2 to 3 minutes. (Start with 2 minutes and check if cooked. If not, place back into microwave for another 30 seconds). Let cool.
- To make the frosting, mix cream cheese and maple syrup until well blended. Spread over carrot cake and dig in.

Hi Susan. Joy’s microwave is 950 watts, but yes, as you mentioned, every microwave is different, so you may have to adjust based on your microwave. Joy gives a time range for cooking in the recipe above, so you can use that as a guide. Hope this info helps!
