Jack-o’-Lantern Peppers
These adorably cute jack-o’-lantern peppers will be the hit of your Halloween party. They’re the perfect delivery for dip—choose your favorite: hummus or guac or any homemade masterpiece. Or, stuff them with crudité and serve the dip, including salsa, ranch, honey mustard, or any other salad dressing you love, on the side.

In this version, I went with carrot and celery sticks, but you can also try cucumber or asparagus spears, sugar snap peas, and endive leaves. It works great as a fun snack for kids or you can whip up a whole bunch and serve on a platter as a boo-tiful addition to any Halloween or fall-themed party!

Jack-o’-Lantern Peppers
Ingredients
- 1 large orange bell pepper
- 3 celery sticks
- 3 carrot sticks
- 1-2 tablespoons hummus, or guacamole
Instructions
- Using a sharpie, draw eyes, nose, and a mouth on the outside of the pepper to create your jack-0′-lantern. Using a small and sharp paring knife, carefully cut them out.
- Next, slice off the top of the pepper and reserve this for the carved pepper’s hat. Discard any seeds and white pith from inside.
- Add hummus or guac to the bottom, then fill with crudité (cut to the right proportion so the top hat will balance or tilt to stay in position). Place hat on top and serve!

This recipe is un-boo-lievable! Sorry… I couldn’t help myself! 😉 Honestly, it’s so much easier to carve than pumpkins, and so much more delicious!!!
