3-Ingredient Pancakes

You’re going to flip for these flapjacks!
Servings: 3 pancakes

Ingredients
 

  • 1 banana
  • 1 egg, lightly beaten
  • 2 tablespoon whole wheat flour
  • ¼ teaspoon vanilla extract , optional
  • 1 teaspoon maple syrup, optional

Instructions
 

  • Microwave banana in bowl for 20-30 seconds, then mash banana with a fork until smooth. Mix mashed banana with flour, egg, and optional vanilla extract until it forms a smooth batter.
  • Heat a skillet over medium heat and mist with oil spray. Once pan is hot, pour batter onto skillet to form 3 pancakes and cook on both sides until golden brown and cooked (about 3 minutes on each side).
  • Top with 1 teaspoon optional maple syrup for an additional 20 calories.
