This recipe makes 3 pancakes
  • 1 ripe banana, peeled
  • 1 egg, lightly beaten
  • 2 tablespoons whole wheat flour
  • ¼ teaspoon vanilla extract  (optional)
  • 1 teaspoon maple syrup (optional)

Microwave banana in bowl for 20-30 seconds, then mash banana with a fork until smooth. Mix mashed banana with flour, egg, and optional vanilla extract until it forms a smooth batter.

Heat a skillet over medium heat and mist with oil spray. Once pan is hot, pour batter onto skillet to form 3 pancakes and cook on both sides until golden brown and cooked (about 3 minutes on each side).

Top with 1 teaspoon optional maple syrup for an additional 20 calories.
