Caesar Dressing

This dressing beats bottled versions (and homemade calorific creations) any day of the week.

Ingredients
 

  • ½ ripened avocado
  • ¼ cup grated Parmesan
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons Worcestershire sauce
  • ½ teaspoon Dijon mustard
  • 1 clove garlic, minced (or ¼ tsp garlic powder)
  • ¾ teaspoon kosher salt
  • ½ teaspoon freshly ground pepper
  • 1 teaspoon anchovy paste, optional
  • 6 tablespoons water

Instructions
 

  • Place all ingredients in a food processor or powerful blender and mix until thoroughly combined and smooth.
