Strawberry Daiquiri Ice Pops

I transformed this summertime classic into juicy ice pops that are light in calories and packed with refreshing flavor.
Servings: 7 pops
Prep Time: 5 minutes
Total Time: 6 hours

Ingredients
 

  • 2 cups sliced fresh strawberries
  • 2 cups sliced frozen strawberries
  • 1 teaspoon sugar
  • Juice of 1 lime (about 2 tablespoons)
  • 2 oz rum
  • ¼ cup water

Instructions
 

  • In small bowl mix the sugar and fresh sliced strawberries (save the frozen strawberries for later step). Cover and refrigerate for about 20 to 30 minutes, or until strawberries begin to sweeten and release their natural juices.
  • Add the fresh strawberry and sugar mixture to blender with remaining ingredients. Blend until smooth.
  • Pour into ice pop molds and freeze for about 6 hours or until frozen solid.
