I transformed this summertime classic into juicy ice pops that are light in calories and fiercely fat on flavor. Plus, each chilly treat provides fiber and immune-boosting vitamin C. These are great fun to serve at a party or stash ‘em in the freezer and enjoy one (or two) when you’re craving some delicious private time.

This recipe makes 6 to 8 pops
Ingredients:
  • • 2 cups sliced fresh strawberries
  • • 2 cups sliced frozen strawberries
  • • 1 teaspoon sugar
  • • Juice of 1 lime (about 2 tablespoons)
  • • 2 oz rum
  • • ¼ cup water

 

Preparation:

In small bowl mix the sugar and fresh sliced strawberries (save the frozen strawberries for later step). Cover and refrigerate for about 20 to 30 minutes, or until strawberries begin to sweeten and release their natural juices.

Add the fresh strawberry and sugar mixture to blender with remaining ingredients. Blend until smooth. Pour into ice pop molds and freeze for about 6 hours or until frozen solid.
