Who’s psyched for ‘shrooms? I am! These air fryer mushrooms make for a perfectly chewy, earthy, satisfying snack. It’s a cinch to toss together and they are ridiculously good. You have been warned 🙂

This recipe makes 4 servings
Ingredients:

• 1 pound button mushrooms, sliced in halves or quarters*
• 1 tablespoon extra virgin olive oil
• 2 tablespoons reduced-sodium soy sauce
• 1 teaspoon garlic powder
• 1 tablespoon sriracha sauce (optional, if you love heat)

*Do not cut in very small pieces or they’ll fall through the basket holes.

Preparation:

Mist basket with nonstick oil spray, and set at 375˚.

Rinse mushrooms and pat dry. Add to a mixing bowl and toss with olive oil, soy sauce, garlic powder and sriracha, if using, to evenly coat them. Add mushrooms to the bottom of air fryer basket, close drawer and cook for 15 minutes, tossing them a few times while they cook to ensure they brown evenly.

Season with salt and pepper to taste. Garnish with optional scallions.
