Flourless Chocolate Brownies

Brownie lovers, rejoice! These chocolatey bites of heaven taste so rich and fudgy, you’d never know they contain two heart-healthy ingredients that also bump up the protein and fiber: oats and almond butter.

Ingredients
 

  • cup rolled oats
  • ¼ cup cocoa powder
  • teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • ½ cup natural applesauce
  • 1 large egg
  • ¼ cup creamy almond butter
  • 2 teaspoons vanilla extract
  • cup honey
  • cups semi-sweet chocolate chips, divided

Instructions
 

  • Preheat oven to 350˚F. Mist an 8-inch-square baking dish with nonstick oil spray and set aside.
  • In a food processor, add oats, cocoa powder, baking powder, baking soda, and salt. Pulse for about 1 minute until a fine flour forms and the oats are completely smooth.
  • Add applesauce, egg, almond butter, vanilla and honey, and process until a smooth batter forms. Carefully remove the blade, scraping all of the excess batter back into the food processor bowl. Using a spoon, fold in 1 cup of the chocolate chips.
  • Pour the batter into the prepared baking dish and spread evenly with a spatula. Sprinkle the remaining chocolate chips over the top. Bake in oven for about 25 to 30 minutes (25 minutes for soft, gooey brownies and 30 minutes for soft, yet slightly firmer). Let cool for at least 10 minutes before cutting and serving.
