No stovetop, no time, no problem! If you have a mug and microwave, then you’ll have a delicious, protein-packed breakfast ready in 2 minutes. Pair this easy dish with some fiber-filled fruit for a delicious breakfast that will keep you satisfied until lunchtime.

This recipe makes 1 serving
  • • 1 egg
  • • 3 egg whites
  • • 2 tablespoons shredded reduced-fat cheese
  • • Optional dash of any of the following: Kosher salt, pepper, paprika, fresh chives, hot sauce, garlic powder, and any other fresh herbs

Mist an oversized mug with nonstick cooking spray, add the egg and egg whites and whisk.  

Microwave for 45 seconds, remove from microwave, add cheese and optional seasonings, then gently stir. Microwave for another 45 TO 60 seconds, remove from microwave. Grab a fork and dig in.
