And it’s a breeze to scale this simple recipe up or down, depending upon how much you’d like to make.

The process is as easy as can be. Simply mix ¼ cup of your favorite store-bought hummus, and in a bowl, mix in 1 ½ tablespoons water, 1 tablespoon extra-virgin olive oil, 1 teaspoon fresh lemon juice for a burst of brightness, and a pinch of salt to elevate the flavors. Finally, sprinkle in a dash of smoked paprika to infuse the dressing with a subtle, tantalizing smokiness. For a thicker consistency, add only 1 tablespoon water. I’m telling you it’s a clever way to transform your beloved hummus into a delectable salad dressing that will elevate your greens to new heights.

This recipe makes 6 tablespoons
  • • ¼ cup hummus
  • • 1½ tablespoons water
  • • 1 tablespoon extra-virgin olive oil
  • • 1 teaspoon lemon juice
  • • Pinch of salt
  • • ¼ teaspoon smokey paprika, optional

Combine all ingredients in a bowl and mix until it has a smooth dressing consistency. Season with additional salt, pepper, and any other seasonings to taste.
