While I would love to take credit for this delish recipe, I must credit my fabulous intern, Nana. Get ready to crunch on clusters of granola goodness!

There are many rewarding things in life, and making your own homemade granola is one of them— especially this Almond Butter Granola. Sounds fancy, but is SO easy to make. Just a mix of a few simple ingredients and you’re well on your way to enjoying clusters of honey caramelized oats, coated in luscious almond butter and sweetened with dried cranberries. The best part: you can make it your own with any nut, seed, or dried fruit you like. Finally, a good and wholesome granola without a ton of added sugar… exactly what we deserve!

This recipe makes 17 servings
Ingredients:
  • •  ¼ cup almond butter, room temperature
  • •  ¼ cup honey
  • •  ¼ cup neutral oil (grapeseed oil, melted refined coconut oil)
  • •  1 teaspoon ground cinnamon
  • •  Pinch of salt
  • •  3 cups rolled oats
  • •  1/3 cup sliced almonds
  • •  Dried cranberries, optional
Preparation:

Preheat oven to 300ºF and line a baking sheet with parchment paper, set aside.

In a large bowl, whisk together oil, honey, salt, ground cinnamon and almond butter until well combined. Fold the oats and sliced almonds into the oil mixture until evenly coated. Spread granola onto the prepared baking sheet.

Bake for 30 minutes, stirring halfway.

Allow granola to completely cool before adding dried cranberries, if desired. Break granola into clusters and store in an airtight container.
