Celebrate the flavors of summer with these red, white and blue Caprese Skewers. It’s a simple app that brings together the classic combination of juicy cherry tomatoes and creamy mozzarella balls, enhanced with the refreshing choice of either basil or mint leaves. Plus, these skewers provide a berry delicious twist—I’ve incorporated plump blueberries or blackberries for an extra burst of flavor and fun. The balsamic glaze is optional, but in my opinion, it truly adds next level yum factor.

This recipe makes 40 pieces
Ingredients:
  • • 1 cup basil or mint leaves, torn into bite-sized pieces
  • • 1 container fresh mozzarella pearls
  • • 1 cup red cherry or grape tomatoes, halved
  • • 1 cup plump blueberries or blackberries
  • • 40 large toothpicks or thin skewers
  • • Balsamic glaze, optional
Preparation:

To assemble the skewers, thread a tomato half through the toothpick, followed by a mozzarella ball, a berry, and the remaining tomato half. Lastly, pierce a basil or mint leaf on the toothpick. Make as many skewers as you like or until all of the ingredients are used up. Transfer the skewers to a serving platter and drizzle over balsamic glaze, or serve on the side as a dip.
