Tortilla Breakfast Pizza
Pizza for breakfast? Yes! This healthy spin on a classic afternoon dish will get your day started off on the right foot.
Ingredients
- 1 whole-grain tortilla, any brand with no more than 100 calories
- ¼ cup tomato sauce
- ¼ cup part-skim shredded mozzarella
- 2 slices turkey bacon, cooked and chopped
- 1 cup baby spinach leaves
- 1 to 2 large eggs
Instructions
- Preheat oven to 450˚. Line a baking sheet with parchment paper.
- Place the tortilla on the baking sheet and toast in the oven for 2 minutes on each side until crispy. Remove from oven and spread tomato sauce evenly over the top.
- Then scatter the spinach leaves, cheese and bacon on top. Place pizza back in oven until cheese is melted, about 4 additional minutes.
- While pizza is baking, cook the egg to your preference (scrambled or sunny side up) in a skillet coated with oil spray. Remove pizza from oven and place the egg on top. Cut into 4 equal slices and dig in.
