If you need a go-to dressing in a flash, I bet on this citrus vinaigrette. It’s light and bright, and makes it so eeeeasy to devour more greens. And while it’s perfect for any chopped salad, I also love to drizzle it on a sliced avocado or cucumber. There’s no stressing with this dressing!

- • 3 Tablespoons fresh lemon juice
- • 2 Tablespoons extra virgin olive oil
- • 1 Tablespoon rice vinegar
- • 1½ teaspoons lemon zest
- • 1 teaspoon Dijon mustard, or more to taste
- • ⅛ teaspoon salt, more to taste
- • ⅛ teaspoon ground black pepper
Add all ingredients to a small bowl and whisk until everything is well combined. Season with additional salt and fresh ground pepper to taste.
Store in an airtight container or jar for up to 1 week in the fridge.
