It’s morning, which means it’s time to rise, shine and grab a mug for some steaming…omelet? That’s right! Skip the coffee (or have it, but grab a second mug) and whip up an easy-breezy western mug omelet, complete with vitamin-C-packed green bell peppers, protein-rich eggs and ham, flavorful onions, and of course, melty cheese. In only three minutes with just a single mug (can you say fuss-free?), you’ll have a morning meal fit for a king or queen. It’s mug-nificent!

This recipe makes 1 omelet
Ingredients:

• 2 eggs
• 1 tablespoon chopped green bell pepper
• 1 tablespoon chopped onion
• 1 tablespoon chopped ham (1 slice)
• 1 tablespoon crumbled/grated cheese of choice, optional
• Pinch salt and pepper
• Scallions or chives, optional garnish

Preparation:

Mist the inside of a (12-ounce) microwave-safe mug with oil spray. Add eggs and whisk together. Mix in remaining ingredients until well combined.

Place mug in the microwave, uncovered, and cook for 45 seconds. Remove and stir contents with a fork. Microwave for another 45 seconds. Remove and stir again. Microwave one last time for 30 more seconds, stirring at the 15-second mark and checking for doneness. Season with salt and pepper to taste, and garnish with scallions or chives, if desired.
