Roasted Tomatoes

This delicious and bright side dish is a terrific complement to grilled chicken or halibut.
Servings: 2 servings
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

Ingredients
 

  • 1 pint tomatoes, cherry or grape (whole or sliced in half)
  • Garlic powder to taste
  • Kosher salt and pepper to taste
  • 1 to 2 tablespoons balsamic vinegar, optional
  • Basil, optional

Instructions
 

  • Spread tomatoes on a baking sheet and mist with olive oil spray. Sprinkle with the garlic powder, salt and pepper. Add balsamic vinegar if desired.
  • Roast in the oven at 450 degrees for 15 to 20 minutes (or up to 30 minutes, depending on your preferred texture).
