Matzah Brei is a classic Passover breakfast that’s a mix between French toast and a pancake. I’ve been making (and enjoying) this delicious dish since I was a little kid, so decided to create a muffin—and donut—rendition. It’s simple to make and a tasty, fun alternative to serve during the holidays. You don’t want to “pass over” this one!

This recipe makes 12 servings
Ingredients:
  • 5 whole wheat matzah sheets (broken up into very small pieces)
  • 6 whole eggs, lightly beaten
  • 4 tablespoon butter, melted
  • 3 apples finely chopped
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon (or apple pie spice)
  • ¼ cup maple syrup
  • ¼ teaspoon kosher salt
  • Optional chopped walnuts or pecans
Preparation:

Preheat oven to 350°F.

Place matzah pieces into a bowl and covered in warm water for just 2 minutes. Drain well and set aside. *Do not let matzah sit in the water for longer than 2 minutes or it will become too mushy.

Add all ingredients into mixing bowl with matzah pieces and stir to combine.

Liberally coat muffin tins with oil spray and spoon batter evenly among 12. Cook in oven for about 30 minutes.

Alternatively, you can make 24 matzah brie “donuts” or “bagels” using a circular mold with a middle hole. Cooking time will be slightly less.
