Veggie Pizza Casserole

Why wait for a delivery driver to brave the elements when you can create your own delicious masterpiece right in the comfort of your kitchen? Or better yet, try a pizza casserole so you can load up on all your favorite healthy toppings. I start mine off with a low-carb, fiber-filled cauliflower crust, then top it with plenty of antioxidant-rich roasted or sautéed veggies, including broccoli, mushrooms, bell peppers, onions, and tomatoes. And of course, I finish it with a layer of melty cheese. It takes just about an hour, but it is well worth the extra time because it’s gooey and satisfying—it’s a slice of pizza heaven. With this wholesome yet indulgent creation, you can feel good about going back for a second slice!
