Think of this as your new favorite upgrade to plain old toast. Creamy pistachio butter spread thick over lightly toasted (whole-grain 😉) bread, topped with sweet banana slices and a dash of gooey honey that ties everything together in the most irresistible way. Now let’s talk pistachios. I absolutely adore them. If I’m being honest, my favorite way to enjoy them is straight from the freezer—shelled, cold, and crunchy (so, so good). That’s one of my grab-and-go snacks when I need something quick between meetings. But when I’m sitting at my desk working or easing into the morning, I love slowing down for a slice of toast with a generous swipe of Homemade Pistachio Butter… yuuuum! 

Pistachio butter is rich, creamy, and has a naturally sweet, buttery flavor that pairs beautifully with banana and honey (or maple syrup). And if you prefer not to make your own pistachio butter, you can easily swap ina swipe of peanut butter, almond butter, or cashew butter for an equally delicious result. Also, try sunflower seed butter or soy nut butter… so many options!

Pistachio Butter Banana Toast with Honey

When you want something nourishing and special, this simple toast combination delivers every time.
Yield: 2 servings
Prep Time: 10 minutes
Total Time: 10 minutes

Ingredients
 

  • 2 slices of bread, toasted to your liking
  • 2 tablespoons Pistachio Butter, homemade or store-bought
  • 1 banana, sliced
  • 1–2 teaspoon honey
  • 2 tablespoons roasted pistachios, roughly crushed

Instructions
 

  • Toast your bread until golden and crisp, and spread 1 tablespoon of pistachio butter generously over each slice.
  • Top with banana slices — about half a banana per piece— and drizzle ½ to 1 teaspoon of honey over each toast.
  • Finish with a sprinkle of crushed pistachios for a little crunch. Serve immediately and enjoy!
