No matter where your summer journey takes you—a day at the beach, sightseeing in that charming town nearby or to a farther-away dream destination—don’t forget to pack this key item: energizing eats. Of course, nowadays, you can find something wholesome to eat no matter where you go, but I’ve found it’s helpful to have something healthy on hand for those moments you’re feeling a little snacky. Here are a few easy-to-make munchies for your trip:

Ready, Set, Road Trip

No matter where your summer journey takes you—a day at the beach, sightseeing in that charming town nearby or to a farther-away dream destination—don’t forget to pack this key item: energizing eats. Of course, nowadays, you can find something wholesome to eat no matter where you go, but I’ve found it’s helpful to have something healthy on hand for those moments you’re feeling a little snacky. Here are a few easy-to-make munchies for your trip:

Road Trip Ready: Easy-Breezy Snacks

Easy-breezy snacks

When hunger strikes and you need something speedy and satisfying, I say go nuts—or get seedy! Nuts are a super snack choice because you can eat them raw or roasted by the handful. I’ve recently been making roasted pepitas (pumpkin seeds), which are perfect for traveling, as well as movie-watching, shopping or lounging poolside. I whip up two versions: My Cumin-Cayenne Pepitas are ideal for spice lovers (I count myself in this special group), while my Cinnamon Sugar Pepitas can help satisfy a sweet tooth. You can make a big batch in no time, and then dole out snack-size portions for future snack attacks. I also have a delicious Dark Chocolate Peanut Butter Spread that mimics the rich taste and velvety texture of Nutella. Stash it in a container and use it as a dip for fruit, spread it on whole-grain toast with sliced strawberries or grapes…or you can simply enjoy it by the spoonful (no judgment here 😉).

Road Trip Ready: Delish Drinks

Delish drinks

Between the summer heat and busy travels, it’s easy to feel rundown. Stay on top of your game by staying hydrated. There’s always the refreshing, standard seasonal sips, like water, lemonade, iced tea. I like to create fun new versions on these classics. For example, my Peach-Raspberry Iced Tea delivers a ton of delicious flavor without the sugar load. I’ve also been whipping up this Watermelon Cucumber Spa Water for a wonderful summer sip. And try to invest in an insulated travel mug so it will stay cool and you can easily tote around.

Another healthy way to hydrate: Whip up this refreshing Tropical Ices and enjoy it when you first hit the road. To make, combine 1 can LaCroix Guava São Paulo Sparkling Water, ½ cup orange juice and 3 cups frozen pineapple chunks in a blender and process until smooth. Pour into 4 plastic cups or freezer-safe containers and freeze until hard.

Road Trip Ready: Exciting Entrées

If you have a long car ride ahead of you, you may need a more substantial bite. That’s where this Chicken Caesar Wrap comes in. It’s simple to whip up; you can either make them ahead of time or pack the ingredients separately and assemble when ready to eat. It’s hearty, satisfying and contains good-for-you ingredients. Another idea: Bring along a bento box (they sell great ones on Amazon as well as Target, Walmart and other stores). I like this one because it’s functional and colorful, too. Then, fill it with veggies and hummus (try my lentil hummus spin), Southwestern Corn Salad, edamame, Tarragon Chicken Salad, or whatever other portable bites you like.

Road Trip Ready: Tasty Treats

If you’re like me, your sweet tooth doesn’t take a vacation. In fact, mine switches into high gear when I’m away from home, haha. I have a few go-to options that I bring along with me when I’m traveling. This trail mix is so easy, packed with nutrition (7 grams of filling fiber per serving), and the chocolate chips add an indulgent flair. I stash it in my purse or carry-on so I can dig in anywhere. For a deeper chocolate experience, I whip up a batch of these Chocolate Muffins and pack them for the road.
