Pecan Pie-Stuffed Dates
If you’re craving pecan pie vibes… but don’t have the time or energy to start a whole baking situation, you’re going to flip over these Pecan Pie–Stuffed Dates!

These little gems taste like mini pecan pies wrapped inside soft, caramel-like Medjool dates. Warm, gooey, cinnamon-kissed filling… chewy, sweet shells… and absolutely no fuss. They’re a dream for holiday platters—the kind of bite-size sweet everyone grabs and then immediately circles back for seconds and maybe even thirds!





As someone who has created my fair share of pecan-forward recipes over the years — everything from Peach-Pecan Coleslaw and Salad to Pecan-Crusted Chicken Fingers — I can confidently say these beauties deserve a spot in the pecan hall of fame, lol. They deliver that nostalgic, maple-y goodness while staying simple and naturally vegan. Plus, there’s NO baking required. (You’re welcome!)

Pecan Pie-Stuffed Dates
Ingredients
- ¼ cup chopped pecans
- ¼ cup quick oats
- 2 tablespoons maple syrup
- ½ teaspoon vanilla extract
- ¼ teaspoon maple extract, or flavor
- ½ cup water
- Pinch of salt
- Pinch of cinnamon
- 16 Medjool dates, pitted (keep bottoms intact so they form a little pocket)
Instructions
- Combine ingredients (except dates): In a small microwave-safe bowl or ramekin, mix together the oats, pecans, water, maple syrup, vanilla extract, maple extract, salt, and cinnamon.
- Microwave: Microwave for 1 minute, then stir — the mixture will look liquidy; that’s expected. Microwave for 1 additional minute until it thickens. Take it out, give it a good stir and allow the mixture to sit for about 15 minutes so it can thicken further into that gooey pecan-pie–style texture.You can also toss the ingredients into saucepan let it come to a slow simmer and then turn off the heat. It thickens pretty quickly!
- Stuff the dates: Gently split each Medjool date (keeping the bottom intact) and spoon in a bit of the pecan filling. Garnish with an optional small squirt of whipped cream and a pecan piece or sprinkle of chopped pecans.
