Ingredients
 

  • 20 Medjool dates, pitted and split open
  • ¾ cup vanilla Greek yogurt, a single-serve container
  • Juice of 2 key limes or 1 regular lime, ~2 tablespoons
  • Zest from 1 lime, 1 to 2 teaspoons
  • 1 square graham cracker, crushed

Instructions
 

  • Mix the filling: In a small mixing bowl, combine the Greek yogurt with the lime juice and lime zest. Stir until the mixture is smooth and the flavors are well blended. Set this aside—you’ve just created your key lime pie “filling”.
  • Prepare the dates: Line a baking sheet with parchment paper to keep things tidy. Place the pitted and split dates on the sheet, with the open sides facing up like little boats ready to be filled.
  • Fill the dates: Using a teaspoon, carefully spoon the lime yogurt mixture into the center of each date. Don’t worry if it gets a little messy—that’s part of the fun.
