Chocolate Peanut Butter Rice Cake Treats
Ingredients
- 1 whole-grain rice cake, or ~8 mini rice cakes
- 1 heaping tablespoon creamy peanut butter, or nut butter of choice
- 1 ½ tablespoons semi-sweet or dark chocolate chips, melted
- 1 teaspoon coconut flakes
- 1 teaspoon chopped peanuts
- Flaky sea salt, optional but delicious
Instructions
- Spread the base: Place the rice cake (or arrange mini rice cakes close together) on a plate or small tray. Spread the peanut butter evenly over the top.
- Add the toppings: Spoon the melted chocolate over the peanut butter and gently spread it to the edges using the back of a spoon. Sprinkle with coconut flakes, chopped peanuts, and a pinch of flaky sea salt, if using.
- Let it set and enjoy: Place in the freezer for at least 20 minutes, until the chocolate firms up into a snappy shell. Eat straight from the freezer, or let it sit for a minute for a slightly softer bite.
