Chocolate Peanut Butter Rice Cake Treats

Everything you want in a snack—crunchy rice cake, creamy peanut butter, a magic shell chocolate coating, and a finishing sprinkle of coconut, peanuts, and flaky sea salt.
Yield: 1 rice cake
Prep Time: 5 minutes
Chill Time: 20 minutes
Total Time: 25 minutes

Ingredients
 

  • 1 whole-grain rice cake, or ~8 mini rice cakes
  • 1 heaping tablespoon creamy peanut butter, or nut butter of choice
  • 1 ½ tablespoons semi-sweet or dark chocolate chips, melted
  • 1 teaspoon coconut flakes
  • 1 teaspoon chopped peanuts
  • Flaky sea salt, optional but delicious

Instructions
 

  • Spread the base: Place the rice cake (or arrange mini rice cakes close together) on a plate or small tray. Spread the peanut butter evenly over the top.
  • Add the toppings: Spoon the melted chocolate over the peanut butter and gently spread it to the edges using the back of a spoon. Sprinkle with coconut flakes, chopped peanuts, and a pinch of flaky sea salt, if using.
  • Let it set and enjoy: Place in the freezer for at least 20 minutes, until the chocolate firms up into a snappy shell. Eat straight from the freezer, or let it sit for a minute for a slightly softer bite.

Notes

• Storage: Once set, store in an airtight container in the fridge for up to 3 days or in the freezer for up to 1 month.
• Banana/dates boost: Sometimes I add a thin layer of sliced banana or chopped dates between the peanut butter and chocolate—so good!
• Rice cake swaps: If you can’t find plain mini rice cakes–popped corn cakes or other flat popped-grain snacks work well. Just stick with flat shapes so the toppings stay put.
• Chocolate tip: Mist your ramekin with oil spray before adding the chips for easier clean up. Then, melt chocolate chips in the microwave in 30-second bursts, stirring between rounds. The quick chill/freeze helps create that irresistible “magic shell” effect.
• Nut-free option: Use sunflower seed butter and swap chopped peanuts for pumpkin seeds.
• Gluten-free: Most rice cakes are naturally gluten-free—just double-check labels.
• Vegan: Use dairy-free chocolate chips.
