This recipe makes 4 servings
Ingredients:

Pina Colada
1½ cups frozen pineapple chunks
¾ cup canned light coconut milk (make sure to stir after opening can)
1½ ounces rum
1 to 2 drops coconut extract
2 tablespoons shredded coconut
3 to 5 ice cubes
fresh pineapple wedge for garnish

Strawberry Daiquiri
2 cups sliced strawberries, fresh
1 to 2 teaspoons sugar
2 cups sliced strawberries, frozen
1 ounces rum
3-5 ice cubes (add more if you desire an icier consistency)

Preparation:

To make Pina Colada:

Add all the ingredients to a blender and process until smooth and creamy.

To make Strawberry Daiquiri:

In small bowl mix the sugar and fresh sliced strawberries (save frozen strawberries for later step). Cover and refrigerate for about 20 to 30 minutes, or until strawberries begin to sweeten and release their natural juices. Add the fresh strawberry-sugar mixture to blender with remaining ingredients. Blend until smooth and frothy. Add additional ice cubes, if desired, to thicken

Miami Vice Assembly:

Once both drinks are prepared. Pour ½ cup of Pina Colada and ½ cup of Strawberry Daiquiri into serving glass at the same time, from opposite ends of the glass. Enjoy immediately.

 

*Turn these cocktails into ice pops, AKA “Pop-tails” for only 55 calories a piece. To make: pour Pina Colada mixture to fill up ½ of the popsicle molds and stash in freezer for about an hour to firm up. Then, add Strawberry Daiquiri mixture to fill up the rest of the popsicle mold. Let freeze for 5 to 6 hours or overnight.
