One big beautiful burger bowl is on the menu and it’s bursting with Mediterranean goodness— leafy greens, a juicy turkey patty, feta, kalamata olives, and creamy tzatziki

The star of the bowl is my homemade Greek-style turkey burger, made with lean ground turkey, roasted red peppers, red onion, garlic, feta, oregano, and fresh herbs. They’re so flavorful, you can enjoy them on their own, in a pita, or—my favorite way—in this bowl.

What’s in the bowl

When I’m serving this for dinner, I like to prep each component separately so the final assembly feels a little like a “build-your-own bowl” bar. Everyone can tailor it to their taste. Personally, I go all in and load mine up with everything. But what’s great is that any combo works, coming together for one epic, nourishing meal.

It’s also terrific for casual dinner party meals. I set out all the fixings and let everyone build their own bowl—or burger! Yep, if someone wants to go traditional and use a bun for the patty with salad on the side, I’ve got them covered! 

Why I keep coming back to this one

The chopped Greek salad in this bowl brings crunch, color, and a fresh, tangy bite. It’s a simple mix of cucumbers, cherry tomatoes, and red onion over a bed of leafy greens—classic ingredients that never go out of style. I toss it with this Red Wine Vinaigrette, an easy dressing made with just a few pantry staples. It adds the perfect punch of acidity to balance the richness of the turkey burger and creamy tzatziki. Greek Turkey Burger Bowls with Tzatziki

Ingredients
 

For the Greek Turkey Burgers:

  • 1 pound ground turkey, at least 90% lean
  • ½ cup finely chopped jarred roasted red pepper, patted dry with paper towels
  • cup crumbled feta cheese
  • 2 garlic cloves, minced (or ½ teaspoon garlic powder)
  • 1 teaspoon dried oregano
  • ¼ cup finely diced red onion
  • 2 tablespoons fresh parsley, finely chopped (or 1 teaspoon dried)
  • 2 tablespoons fresh dill, finely chopped (or 1 teaspoon of dried), optional
  • ¼ cup finely chopped jarred pepperoncini peppers, patted dry with paper towels, optional
  • Freshly ground black pepper to taste
  • ½ teaspoon kosher salt, or more to taste

For the Chopped Greek Salad Bowls:

  • 8 cups chopped romaine or mixed greens
  • 2 cups cherry tomatoes, halved
  • 2 cups cucumber, chopped
  • ½ cup  thinly sliced red onion
  • ½ cup sliced kalamata olives
  • ½ to 1 cup crumbled feta cheese
  • ½ cup  red wine vinaigrette, or dressing of choice

For Topping:

  • ½ tzatziki sauce, store-bought or homemade
  • Optional: fresh herbs (parsley or dill), lemon wedges, pita chips or triangles on the side

Instructions
 

Make the Turkey Burgers:

  • In a large bowl combine the ground turkey, roasted red pepper, feta, garlic, oregano, red onion, parsley, and optional dill and pepperoncini, if using. Season with freshly ground black pepper to taste. Mix with clean hands or a rubber spatula until everything is fully incorporated.
  • Divide the meat mixture into four equal portions and shape into large patties placing on a nonstick surface such as wax paper or parchment. Sprinkle kosher salt over the tops of each patty. (For grilling, I recommend misting both sides of the burgers—and the grill—with oil spray because they can really stick!)
  • Coat a large sauté pan with oil spray and warm over medium-high heat. (Alternatively, preheat an indoor or outdoor grill pan coated with oil spray.)
  • Place the burgers in the pan and cook for ~6 minutes per side, or until the burgers are no longer pink in the center or 165˚. After flipping, sprinkle kosher salt over the tops of the second side as well. (Pro tip for outdoor grilling: the burgers will start to loosen slightly from the grates when they are ready to flip. You are looking for nice char marks and caramelization.)

Build the Salad Bowls:

  • In a large bowl, toss together the lettuce, tomatoes, cucumber, red onion, olives, and feta. Drizzle with red wine vinaigrette and toss again to coat. Divide the salad mixture evenly among 4 bowls.

Assemble and Serve:

  • Top each salad bowl with a warm turkey burger and a generous spoonful of tzatziki. Garnish with fresh herbs, if desired.
