Yeehaw we’re creating a Cowboy Caviar feast. Also known as Texas Caviar, this dish is the ultimate crowd-pleaser.

Ingredients
½cupcanned black-eyed peas, rinsed and drained
½cupcanned black beans, rinsed and drained
½cupsweet yellow corn
½tomato, chopped
2tablespoonsred onion, finely diced
2tablespoonsred or orange bell pepper, finely diced
2 to 4tablespoonsfresh cilantro, minced
Crumbled feta cheese or cubed chicken, optional
Dressing
1tablespoonlime juice
2teaspoonsextra virgin olive oil
⅛ to ¼teaspoonkosher salt
Pinchground cumin and chili powder, optional
Instructions
Arrange everything (except dressing) in decorative piles in a one-serving bowl. Drizzle dressing ingredients over the top and mix to combine. Serve immediately or chill in fridge to let the flavors mingle together.
For a scrumptious spin, add chopped chicken or feta cheese. You can also add diced avocado right before serving.
