3cupsold-fashioned rolled oats*
1teaspooncinnamon
½teaspoonginger
½cupunsweetened applesauce
¼cupmaple syrup
1teaspoonvanilla extract
¼cupunsweetened dried cherries
2tablespoonsraw pumpkin seeds

Instructions
Preheat oven to 275˚. Line a baking sheet with foil.
In a large mixing bowl, combine oats, cinnamon and ginger. In a separate, smaller bowl, mix together applesauce, maple syrup and vanilla.
Add the wet mix to the dry mix; stir to combine. Fold in the cherries and pumpkin seeds and pour the mixture onto the prepared baking sheet in one even layer.
Bake for about 45 minutes, stirring every 10 to 15 minutes until lightly browned and crunchy. Remove from the oven and let cool.
