Ingredients
2large cucumbers
½cupcrumbled blue cheese
3scallions, sliced, plus more for garnish
Chopped fresh parsley for garnish
2 to 3tablespoonsBuffalo Ranch Dressing
Buffalo Ranch Dressing
½cupplain Greek yogurt, low-fat or nonfat
2tablespoonslow-fat mayonnaise
1tablespoonmilk of choice
1tablespoonfresh lemon juice
¼teaspoonground black pepper
¼teaspoonkosher salt
¾teaspoononion powder
¼teaspoongarlic powder
1tablespoonfinely chopped fresh chives
1tablespoonfinely chopped fresh parsley
½teaspoonfinely chopped fresh dill, or ¼ teaspoon dried dill
3 to 4tablespoonshot sauce, or more to taste
Instructions
For the Buffalo Ranch Dressing:
In a medium bowl, mix all dressing ingredients. Set aside.
For the Cucumber Boats:
Cut 1 cucumber in half or in thirds lengthwise. Using a spoon, scoop out the seeds and insides and discard them.
For the Buffalo-Cucumber Filling:
Peel the second cucumber and cut it into ¼-inch cubes. You’ll have 2 cups. In a medium bowl, mix the cubed cucumbers, blue cheese, scallions, and 2 to 3 tablespoons of the Buffalo Ranch Dressing. (Save leftover dressing in an airtight container for up to 1 week.)
Stuff the cucumber boats with the cucumber salad and garnish with extra scallions and parsley.
