Better-for-You Loaded Nachos
Indulge in a fiesta of flavors with this mouthwatering recipe! This rendition takes nachos to a whole new level by incorporating a plant-based meat replacement.
Ingredients
- 1 medium onion, diced
- 16 ounces Beyond Beef, 1 package
- 1 tablespoon taco seasoning
- 1 tablespoon cumin
- 1 tablespoon lime juice
- 1 teaspoon lime zest
- Salt and pepper to taste
- 12 oz tortilla chips, 1 bag
- 1 cup cheese, shredded Mexican blend or queso
- Optional toppings: , black beans, corn, diced tomato, chopped scallions, minced cilantro, sliced jalapeños
- Optional garnishes: , greek yogurt, salsa, hot sauce, chopped avocado
Instructions
- Preheat oven to 425˚
- Liberally mist a large skillet with oil spray.
- Add onion and cook about 2 minutes. Add plant-based Beyond Beef and cook about 2 minutes, breaking up into smaller pieces as it browns.
- Add taco seasoning, cumin, lime juice and lime zest. Cook about 4 more minutes. Season with salt and pepper to taste.
- Spread tortilla chips on large baking sheet (or 2 smaller) in a single layer and spoon seasoned beef crumbles on top.
- Add cheese and optional toppers, and bake for about 10 minutes, until chips are golden and crispy and cheese is melty.
- Top with preferred garnishes and dig in!
