Almond Joy treats will always have a special place in my heart because, well… hello, I’m Joy! Seeing your name on a candy bar as a kid? Pretty much the ultimate thrill, haha. And now, as a registered dietitian for more than 30 years— which I can barely believe myself!— I get an even bigger smile knowing I can reimagine those nostalgic sweets in a way that’s both delicious and health-supporting. These Almond Joy Crispy Bites deliver on every level.

They were inspired by my original Chocolate Peanut Butter Crispy Bites, the crunchy little gems that everyone goes wild for on social media. Both versions are bite-size, and freezer-friendly, but they each have their own personality: the OG leans into that rich chocolate-peanut butter combo, while these bring the dreamy chocolate-coconut-almond trio we all know and love from the classic candy bar. It’s a no-bake treat with a playful crunch-chewiness and just the right amount of sweetness.

Nostalgic “jackpot!”

I have the sweetest memory from Halloween when I was little. My brothers, sister and I would come home from trick-or-treating, dump our loot onto the floor and begin the very serious business of sorting, comparing and trading. I would immediately claim every Almond Joy in the pile, proudly announcing, “It has my name on it, so it must be mine!” And as the oldest sibling, naturally, everyone obliged. 😉

These indulgent bites give me that same nostalgic “jackpot!” feeling— only now, I can whip up a batch in my own kitchen and keep them tucked in the fridge or freezer for whenever a chocolate-coconut-almond craving strikes. They’re perfect for after-dinner nibbling, a midday-pick-me-up, or sharing with anyone who loves a candy bar glow-up!!

Almond Joy Crispy Bites (Healthy and No-Bake!)

Chewy, crispy, and coconutty with rich chocolate tops. Inspired by the classic candy bar (and my name!), these no-bake treats are made with wholesome ingredients!
Yield: 16 bites
Prep Time: 25 minutes
Chill Time: 20 minutes
Total Time: 45 minutes

Ingredients
 

  • 5 tablespoons almond butter, ¼ cup + 1 tablespoon
  • 2 tablespoons maple syrup
  • ½ teaspoon vanilla extract
  • ½ cup old-fashioned rolled oats
  • 2 tablespoons shredded coconut
  • 1 tablespoon cocoa powder
  • 1 tablespoon warm water
  • ½ cup crispy rice cereal, like Rice Krispies
  • ¼ cup finely chopped roasted, salted almonds
  • ½ cup semi-sweet or dark chocolate chips
  • Flaky sea salt for sprinkling on top

Instructions
 

  • Make the base mixture: In a medium bowl, stir together the almond butter, maple syrup, and vanilla extract until smooth and creamy.
  • Add the remaining ingredients: Stir in the oats, shredded coconut, cocoa powder, crispy rice cereal, chopped almonds, and warm water. Keep mixing and pressing the mixture together. It will become thicker and clumpy as you stir.
  • Form the bites: Scoop out small portions and gently press the mixture together, pinching it with your fingers or palms—it’s a bit fussy at first, but it’ll eventually come together and you’ll get the hang of it. Then gently roll into balls between your palms. Aim for about 16 bites. Place on a parchment-lined plate or tray.
  • Melt the chocolate: Add the chocolate chips to a microwave-safe bowl and microwave in 30-second intervals, stirring between each, until smooth and glossy. Spoon the melted chocolate over the top half of each bite (or dip them halfway if preferred). Immediately sprinkle with flaky sea salt and, if desired, a little extra shredded coconut and finely chopped almonds. Worth it!
  • Chill: Refrigerate for about 20–30 minutes, or until the chocolate is set and the bites are firm.

Notes

• Storage: Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 2 months.
• Nut & Seed Butter Swaps: You can easily swap the almond butter for peanut butter, cashew butter, sunflower seed butter, soy nut butter, or any nut or seed butter you love.
• Gluten-Free Tip: Use certified gluten-free oats and crispy rice cereal.
• Extra Almond Joy Flavor: Add a tiny splash of almond extract (about ⅛ teaspoon) if you want even more classic candy bar flavor. A little goes a long way!
• Chocolate Shortcut: You can fully dip the bites in chocolate for a more decadent dessert-style treat, but the half-dipped look keeps them lighter and gives that pretty bakery-style finish.
