Spring into sweetness: Oatmeal cookies

Ordinary oatmeal cookies get an overhaul in this recipe. I use rolled oats and whole grain flour to increase the fiber. I also add sweet, antioxidant-rich cherries as well as chocolate because…well… why not?! The result is a soft, chewy, chocolatey cookie that’s oat-of-this-world good.

Blueberries could easily be the apple of every nutritionist’s eye. Loaded with fiber, vitamins (C and K), and potassium, these little blue gems are often found at or near the top of lists featuring the most antioxidant-rich foods. I love their juicy and gentle sweet flavor, how easy it is to enjoy them and how versatile they are. For instance, you can easily eat them as a snack (fresh or frozen), toss them into cereals, oatmeal or yogurt, mix them into pancake or waffle batter, add them to smoothies, even sprinkle them on top of a vegetable salad. Or, even better, let them play the starring role in a delicious fruit crisp dessert like this one, which features a layer of warm, gooey fruit topped with a crispy oat finish. Meet your new dessert crush.

Simple is the key in this dessert. Grilling fruit brings out its natural sweetness—and really, what’s more enticing than gorgeous grill marks? I top it with vanilla ice cream, fresh raspberries and a sprinkle of granola or crushed graham crackers. One bite provides warm, sweet goodness from the peach; creamy satisfaction from the ice cream; tart deliciousness from the raspberries; and an irresistible crunch from the granola. It is ridiculously good!

Three cheers for cherries! This thick and icy sip is the perfect pick-me-up, whether you enjoy it as a snack or dessert. It features just two ingredients: LaCroix’s newest flavor, Cherry Blossom, which has become an instant favorite in my house because it has a gently sweet taste and dazzling floral scent—it’s seriously like spring in a can. And because one dose of cherry isn’t enough, I’ve added frozen pitted cherries, rich in antioxidants and a sweet-tart flavor. If you’re looking for an extra hit of “sweet”, you can add 1 tablespoon maple syrup to the blender (but really, it’s plenty sweet as is). You’ll love it cherry much.
