Easy-breezy snacks

When hunger strikes and you need something speedy and satisfying, I say go nuts—or get seedy! Nuts are a super snack choice because you can eat them raw or roasted by the handful. I’ve recently been making roasted pepitas (pumpkin seeds), which are perfect for traveling, as well as movie-watching, shopping or lounging poolside. I whip up two versions: My Cumin-Cayenne Pepitas are ideal for spice lovers (I count myself in this special group), while my Cinnamon Sugar Pepitas can help satisfy a sweet tooth. You can make a big batch in no time, and then dole out snack-size portions for future snack attacks. I also have a delicious Dark Chocolate Peanut Butter Spread that mimics the rich taste and velvety texture of Nutella. Stash it in a container and use it as a dip for fruit, spread it on whole-grain toast with sliced strawberries or grapes…or you can simply enjoy it by the spoonful (no judgment here 😉).
