Shell-less pumpkin seeds (AKA pepitas) are a super snack because they boast magnesium, zinc, protein and fiber, nutrients that offer a diverse list of perks, from fighting off headaches to boosting your immunity to helping balance your blood sugar. I like to make two different versions of this recipe—my personal favorite involves a spicy spin, but my kids argue this sweeter seasoning is most definitely the front-runner.
