Fall recipes: Apple Pie Crumble

Apple Pie Crumble

If you’ve gone apple picking, you may be looking for a way to use all the tasty bounty. Apple pie is an obvious choice, but I have a sweeter, easier and much lighter solution: This apple pie crumble, which takes just a few minutes to whip up, calls for only a handful of ingredients and offers all the amazing real deal flavors. Bonus: You can make a single serving at a time!

Fall recipes: Pumpkin Pudding

Pumpkin Pudding

Pumpkin + pudding = perfection! This treat is ideal as a quick breakfast or satisfying snack. Pumpkin puree, the star ingredient, is bursting with filling fiber and beta-carotene, a powerful antioxidant. This easy-to-make rendition tastes just like pumpkin pie filling, but it’s also loaded with protein. And because it relies on canned pumpkin (usually found in the grocery baking section), you can enjoy it whenever you want–no matter the season.

Fall recipes: Savory Pumpkin Meatballs

Savory Pumpkin Meatballs

You will melt for these mouthwatering meatballs—the warm cinnamon, the slightly sweet nutmeg, the earthy pumpkin. While they’re delish any time of year, they’re especially perfect during the cooler Autumn months or served as a festive holiday dish when we’re all craving cozy seasonal flavors. When they finish cooking in the oven, I love to add them to a simmering pot of marinara sauce on the stove and then serve over spaghetti squash or whole-grain penne. Another family favorite is to load them on a crusty, whole-grain roll for a meatball hero with a pumpkin-y spin.

Fall recipes: Cinnamon-Sugar Pumpkin Seeds

Cinnamon-Sugar Pumpkin Seeds

Shell-less pumpkin seeds (AKA pepitas) are a super snack because they boast magnesium, zinc, protein and fiber, nutrients that offer a diverse list of perks, from fighting off headaches to boosting your immunity to helping balance your blood sugar. I like to make two different versions of this recipe—my personal favorite involves a spicy spin, but my kids argue this sweeter seasoning is most definitely the front-runner. It combines cinnamon, sugar, olive oil and a little salt. I recommend making and devouring both so you can make the important decision yourself.

Fall recipes: Butternut Squash Soup

Butternut Squash Soup

“Comfort food” and “nutrient-rich” usually don’t go together—but they do tastefully coexist in this out-of-this-world soup. It’s rich, flavorful and provides a dose of vitamin C and beta-carotene to bolster your immune system during cold and flu season. It features creamy butternut squash, fragrant cinnamon and nutmeg, plus, mild leeks and sweet carrots (two soup staples). Go ahead and enjoy a bowl of soothing, good-for-you comfort!

Fall recipes: Apricot-Orange Spritzer

Apricot-Orange Spritzer

Mocktails are so great because they give you the festive feeling without the dreaded hangover…or extra calories. This Apricot-Orange Spritzer (which I mixed up completely by accident!) is super hydrating and tons of fun. I use Apricot LaCroix Sparkling Water as the base and combine it with sweet orange juice and then add an orange twist or slice for some pizzazz. It’s fizzy, fruity and completely refreshing.
