It’s just not a Cinco de Mayo celebration without guacamole. The creamy dreamy dip is the official starter to a Mexican meal. Avocado is loaded with healthy fat and also provides fiber and potassium, so you can feel good dipping away. In this version of guac, I throw in tequila to, well, help get the party started. I usually like to serve the finished product in a margarita glass with a salted rim surrounded by whole-grain tortilla chips and crunchy carrot sticks because a pretty presentation is everything.

Think it’s a coincidence that Cinco de Mayo falls on a Tuesday? Bring on the tacos! Try these hearty, cheesy and just plain delicious Black Bean Tacos. I stuff the shells (feel free to use whatever you can find: hard or soft shells, fajita or burrito wraps, etc.) with a mouthwatering sautéed black bean and salsa filling that’s a cinch to pull together. Add your favorite toppings—you can even set up a fixin’s bar and include things like corn, chopped tomatoes, onion, lettuce, avocado, cilantro and more, and let the family make their own creations. I combined perfectly seasoned, savory taco meat with creamy mac and cheese, and the result is a hearty and filling dish—really, it’s a Tex-Mex masterpiece. It makes a large amount for a low price tag, so you can feed a crowd or freeze extras for future meals. Feel free to adjust the salsa and seasonings to your liking (mild or spicy, you’re the boss). You can really dial it down for sensitive taste buds or turn up the heat for hot heads.

Fajitas are a family favorite. What’s not to love about the classic? It’s a recipe that comes together in a flash, can be customized to different tastes and is incredibly yummy. You can swap out ingredients based on what you have on hand (for instance, any color bell pepper, onions or other veggie would work; you can swap in any variety of tomato; if you can’t find chicken breast, you can use chicken thighs, or sub in frozen shrimp, lean beef, tofu and so on). Avocado is a delish topping, but if you can’t find, it’s OK to skip. After you cook, stuff, and roll, get ready to enjoy. That’s a wrap.
