Ingredients
1poundmixed mushrooms, such as maitake, king trumpet, and shiitake mushrooms, roughly chopped into quarters or halves
2tablespoonsolive oil
1teaspoonsalt
½teaspoongarlic powder
¼teaspoonblack pepper
Instructions
Heat oven to 450˚.
Add mushrooms to a large bowl and toss with oil.
In a small bowl, mix the salt, garlic and pepper. Add the seasonings to the bowl with mushrooms and toss to evenly coat. Lay the mushrooms out on a baking sheet and mist the tops with extra oil spray.
Roast mushrooms in the oven for about 20 minutes, stirring halfway through. Note: They will generate a lot of water at the 10-minute mark, but that’ll be absorbed when they’re done roasting.
If you’d like them more well done, cook for an extra 5 minutes. Season with salt and pepper to taste, and garnish with optional minced herbs.
