If you’re a peanut butter lover like me, this one’s for you! I was experimenting in the kitchen with my morning coffee and a jar of peanut butter (yes, dangerous combo!), and this dreamy iced latte was born.

It’s the perfect mashup of your favorite nutty spread and a refreshing café-style drink. And let me tell you—it’s ridiculously simple and seriously delicious. Bonus: it’s less expensive than a store-bought version, too.

The warm espresso (or coffee) helps “melt” the peanut butter into a luscious swirl, and the touch of maple syrup and vanilla adds just the right amount of sweetness and flavor. You can use whatever milk you’d like. I tend to go with almond milk or skim milk. It’s like a caffeinated peanut butter cup in a glass… but better. And sassier!

Step 1: Use a spoon to spread the peanut butter around the inside of a medium glass or oversized mug. You can also just add PB to the bottom of your glass. The spread is just for fun!
Step 2: Pour the hot espresso or coffee into the glass. Tilt and swirl to help melt the peanut butter into the brew— and use a spoon to scrape down the sides and give it a good mix.
Step 3: Add milk, vanilla extract, and maple syrup. Stir well until everything is combined and smooth.
Step 4: Drop in some ice cubes, give it one last stir, and enjoy!

Iced Peanut Butter Latte

This recipe is a cool and refreshing drink made with simple ingredients like espresso, peanut butter, and milk. A healthier spin on your favorite coffeehouse order—ready in minutes!

Ingredients
 

  • 1 tablespoon creamy peanut butter
  • 2 to 4 ounces hot espresso, or ¼ cup strong brewed coffee
  • 1 cup milk, dairy or non-dairy
  • ¼ teaspoon vanilla extract
  • 1 to 2 teaspoons maple syrup, adjust to taste
  • Ice cubes

Instructions
 

  • Prepare your glass: Use a spoon to spread the peanut butter around the inside of a medium glass or oversized mug that holds at least 2 cups (to leave room for ice and stirring). It creates a fun visual effect and melts into the coffee like a dream.
    Alternatively, you can simply add the peanut butter directly to the bottom of the glass—when the hot espresso hits it, the PB will start to melt. Use a spoon to stir vigorously and blend the peanut butter into the coffee until smooth. The swirl around the sides is just for fun!
  • Add espresso: Pour the hot espresso or coffee into the glass. Tilt and swirl to help melt the peanut butter into the brew. If needed, use a spoon to gently scrape and mix the PB from the sides so it fully incorporates.
  • Mix in the good stuff: Add milk, vanilla extract, and maple syrup. Stir well until everything is combined and smooth.
  • Cool it down: Drop in some ice cubes, give it one last stir, add an optional squirt of whipped cream, and enjoy!

Notes

Make it your own:
• Add cocoa powder (½ to 1 teaspoon) for a mocha-peanut butter twist.
• Top it off with frothed milk or whipped cream for an indulgent café feel.
• Drizzle a little melted chocolate or extra peanut butter over the top for flair.
• Sprinkle with cinnamon or sea salt for an added flavor punch.
Protein boost:
• Stir in a scoop of unflavored or vanilla protein powder (or collagen peptides) while the coffee is still hot to help it dissolve easily.
