Couldn’t decide between pizza and a quesadilla? Good news: You don’t have to. This Easy Pizza Quesadilla tucks tangy marinara and melty mozzarella between two tortillas, then bakes until golden and crisp. It’s saucy, so cheesy and ready before anyone can ask, “What’s for lunch?”

A sliced Pizza-dilla topped with cheese and herbs sits on a white plate, with a bowl of tomato sauce and shredded cheese nearby on a wooden board.

I’m a big believer in using smart shortcuts to make everyday meals both satisfying and doable. I reach for high-fiber, low-carb whole-grain tortillas here, which bring extra fiber and staying power to the party. Of course, any tortillas will work, so choose the variety that best suits your needs and taste buds. I love transforming tortillas into personal pizzas, whether it’s straight cheese, BBQ chicken, or a High-Protein Breakfast Pizza.

Pizza is one of the foods I’m asked to give a healthier spin most often—and honestly, I understand why. It’s a favorite of yours (and mine!), which makes dreaming up creative new versions an absolute must. The case for putting pizza between tortillas

  • No dough drama. There’s no mixing, kneading, rolling or waiting—just layer and bake.
  • It keeps the clock happy. You’re about 10 minutes away from a hot, homemade pizza fix.
  • Everyone gets their dream pizza. Make individual quesadillas and let each person choose their own fillings.
  • It knows no mealtime. Serve it for lunch, dinner or an after-school snack—pizza rules need not apply.

Think of this three-ingredient version as your starting point, then raid the fridge and make it your own. Tuck in thinly sliced bell peppers, mushrooms, baby spinach, olives, turkey pepperoni or leftover chicken. Just resist the urge to pile it too high—a modest layer of fillings helps the tortillas crisp while keeping everything neatly tucked inside.

For the best texture, give the top tortilla a light mist of oil spray and watch closely during the last few minutes of baking. Once the edges are golden and the mozzarella is wonderfully gooey, finish with fresh basil or chopped chives, slice into wedges and serve with crunchy vegetables, fruit or a simple green salad. Pizza-dilla perfection!

Easy Pizza Quesadilla

Couldn’t decide between pizza and a quesadilla? Good news: You don’t have to.
Yield: 1 serving
Prep Time: 5 minutes
Cook Time: 8 minutes
Total Time: 13 minutes

Ingredients

  • 2 tortillas*
  • ¼ cup jarred marinara sauce
  • ¼ cup shredded part-skim mozzarella cheese, more for top sprinkle
  • 2 slices tomato for hearts
Ingredient Details to Know
*I use a low-carb whole grain tortilla brand which is reflected in the nutrition (each tortilla is 60 calories, 5 grams protein, 10 grams fiber). Choose a type that fits your eating style.

Instructions

  • Preheat oven to 400˚. Mist a baking sheet with nonstick oil spray. Place 1 tortilla on top and using a heart cookie cutter, cut out 2 hearts. Remove tortilla from baking sheet and set aside.
  • Place second uncut tortilla on baking sheet and layer with marinara sauce and cheese. Place 2 tomato slices on top and cover with original tortilla with heart cut-outs, being sure to line up the hearts with the red tomatoes underneath.
  • Mist the top with oil spray and sprinkle on optional shredded cheese. Bake in oven until cheese is all melty and the tortillas are toasted lightly browned, about 8 minutes (watch closely so it doesn’t burn).
  • Garnish with optional herbs, like chopped chives or minced basil, and slice into pieces!
