Meet your new crunchy crush: Cottage Cheese Bell Pepper Boats. They’re cool and creamy—ready in about 5 minutes with nothing more than a cutting board and a spoon. It’s the kind of high-protein snack I love keeping in my back pocket for busy afternoons, post-walk munchies, or anytime I need something tasty fast.

As a registered dietitian, I’m always looking for simple ways to help people build snacks that actually hold them over—and this one I turn to again and again. Here’s why it works: cottage cheese brings protein and creamy richness, while bell peppers add crunch, color, vitamin C, and natural sweetness. Together they make a great combo that’s low-carb, gluten-free, and comes together without any cooking.

Cottage Cheese Bell Pepper Boats (15g Protein!)

Crunchy bell pepper boats filled with creamy cottage cheese and finished with your favorite seasonings—an easy, high-protein snack that’s ready in minutes.

Ingredients
 

  • 1 bell pepper
  • ½ cup cottage cheese
  • Everything bagel seasoning, paprika, fresh herbs, or your favorite seasoning blend, optional

Instructions
