Ingredients
1headcauliflower, cut into florets
¾cupreduced-sodium chicken or vegetable broth
1tablespooncornstarch
4ounceslite cream cheese, 8 tablespoons
2tablespoonsgrated Parmesan or Romano cheese
½teaspoongarlic powder
¼teaspoononion powder
¼teaspoonpaprika
Kosher salt, to taste
Ground black pepper, to taste
Instructions
Steam cauliflower over boiling water until fork-tender, about 15 to 20 minutes (or cook in a microwave with 2 tablespoons water for 8 to 10 minutes until very soft). Drain off any liquid.
Place cauliflower in a food processor or blender along with ½ cup broth. Puree on high until smooth. Transfer puree to a medium saucepan.
In a cup, dissolve cornstarch in remaining ¼ cup broth, and add this mixture to cauliflower puree.
Add cream cheese, Parmesan, garlic powder, onion powder, and paprika. Cook over medium heat, continually stirring, until puree begins to thicken, 2 to 3 minutes.
