This is another great make-ahead recipe because a few extra days of sitting allows the spices and herbs to really blend together, but if you can’t wait, that’s fine, too. It’s delicious straight off the stove.

Chilly weather = chili weather! This version is a family favorite in the Bauer house. It relies on tomatillos instead of tomatoes, so it has a greenish/yellowish shade instead of the typical red/orange color. Of course, I pack in tons of veggies and it’s not chili without beans…I use two types in this recipe.
