And then there’s a pot of simmering soup—oh my goodness, to me, there’s nothing more soothing than a steamy bowl of deliciousness when you’re feeling a bit chilled. You’re cordially invited to slurp up this mouthwatering One-Pot Italian Wedding Soup that marries scrumptious meatballs, disease-fighting produce, flavorful broth and yummy pasta…all in one satisfying spoonful. It will fill your belly and warm your bones. I love that you can make it one pot, so it’s easy prep and cleanup. You can make it ahead on the weekend and enjoy all week long. I do!
Fall Faves: Chicken Tortilla Soup
This pot has the two-for-one bonus of helping to take the chill out and spicing things up in the kitchen. It is jam-packed with good-for-you veggies, including bell peppers, carrots, onions, celery and fire-roasted diced tomatoes. This is another great make-ahead recipe because a few extra days of sitting allows the spices and herbs to really blend together, but if you can’t wait, that’s fine, too. It’s delicious straight off the stove.
Fall Faves: Lentil Veggie Superfood Stew
Snuggle up to a bowl of this filling stew that features a variety of veggies from onions, carrots and tomatoes to bell peppers, spinach and celery. The lentils add satiating protein and the shiitake mushrooms lend meat-like heartiness. You may want to whip up a double batch and stash a portion in the freezer for future meals. It’s perfect for weeknight dinners in a pinch.

Slow Cooker Salsa Verde Chicken Chili
Chilly weather = chili weather! This version is a family favorite in the Bauer house. It relies on tomatillos instead of tomatoes, so it has a greenish/yellowish shade instead of the typical red/orange color. Of course, I pack in tons of veggies and it’s not chili without beans…I use two types in this recipe.
Fall Faves: Virgin Hot Toddy
Snuggly soups and steamy stews aren’t the only way to warm up quickly. Try brewing up a cup of this Virgin Hot Toddy, which features a base of calming chamomile tea blended with sweet vanilla, aromatic cinnamon, and zesty ginger. You’ll get a double dose of tart and bright lemon from the lemon juice and Lemon LaCroix Sparkling Water. It is both refreshing and relaxing—a tasty way to wind down at the end of the day.
